Established in 1887, Glenfiddich, Gaelic for Valley of the Deer, is one of the few single malt distilleries to remain entirely family owned. A new release from The Macallan and one we were thrilled to learn of. Matured in a combination of American and European Sherry oak almost 50:50, though slightly weighted towards American oak ex-Sherry casks. New oak is shipped from America across to Spain, where expert Coopers craft casks. These casks are then sherry seasoned before traveling to the Speyside distillery to mature for twelve years. These whiskies are then united with counterparts aged in sherry seasoned European oak casks. The result is, as you might expect nothing short of seamless. On the palate youll find some spice along with some green fruits though the meat of the palate remains true to style, featuring fat caramelised sultanas, vanilla and wood spice. The Tomatin (Gaelic meaning ‘the hill of bushes’) distillery was built in 1897 and is one of the highest distilleries in Scotland sitting nearby the Hill of Parting which is where the Jacobite clans settled after their defeat at Colloden. The distillery was founded by a Japanese company and it is currently owned by a different Japanese company Takara Shuzo and Okura. The water source for this distillery is All-na-Frithe a burn which is found locally. This helps the distillery produce 5,000,000 litres of whisky each year which makes it one of largest producers in Scotland. The still room has 23 stills in total. The Tomatin 12 Years Old is the flagship single malt of the Tomatin distillery, smooth and easy to drink this single malt is the start of a whisky journey of outstanding quality and flavour. After spending time maturing in traditional oak casks, this particular Tomatin spends the last six to nine months of its maturation exclusively in Oloroso Sherry casks.

“The elemental opposite of the sophisticated Lord of the Isles.” Perched on a wave washed, rocky headland, the Ardbeg distillery was founded in 1815 by the MacDougalls of Ardbeg. The distilleries scattered white washed buildings are reminiscent of a Dutch settlement and add to the dramatic coastal landscape. Ardbeg has had a chequered history and in recent times had been closed down for many years. Glenmorangie acquired Ardbeg in 1997 and has set about restoring the distillery to its former glory. First launched in 2003, “Uigeadail” (the loch from which all Ardbeg water flows) this cask strength, heavily peated Ardbeg is produced from a mix of bourbon casks and older sherry casks. The combination gives this whisky a velvety texture, with a sweet and smokey finish. Tasting notes: Bright gold appearance. Big, sweet sherry influenced nose offers dried apricot and marmalade scents over menthol and sweet cedar smoke. Some ripe green apple notes emerge with time in the glass. The palate is off dry with a rich, dark chocolate entry becoming heavier and fudge-like with orange chocolate, sweet cereal and the peat continually reinventing itself - at once dry and sooty, then tarry and finally kippery on the finish. Excellent balance at cask strength. Boiled lolly and spice aftertaste with a subtle spearmint fade. Latest batch tasted October 2010.

Aged in ex-bourbon casks before being finished in sherry casks. Double Wood is an excellent example of what the Balvenie distillery can craft, even at 12 years.

Sweet aroma, fruity and floral with highland toffee, brambles and a hint of ginger marmalade. The taste is smooth and warming with sweet, malty flavours.

From first fill of bourbon casks creating a creamy, sweet and smoky single malt whisky is Bowmore No. 1.

The Bladnoch Bicentennial Release has been matured for 29 years in Oloroso Sherry casks and finished in Moscatel casks for a final 18 months. Only 200 bottles were made to celebrate 200 years, making this an extremely rare release. Colour: Chestnut gold. Nose: Lovely rich old Sherry aromas, acacia, honey, beeswax, orange, fruitcake, a whiff of coffee and a hint of chocolate. Palate: Soft and silky Sherry flavours. Dark chocolate, ginger, spicy citrus notes, balanced oak and a hint of ground black pepper. Finish: Warming with a hint of honeyed spiciness. Satisfying and long.
