Apart from being a personal preference, we also think crisp, dry Prosecco is the best way to let the wine's refreshing properties shine.
Penfolds Grange Bin 95 Shiraz
The original and most powerful expression of Penfolds multi-vineyard, multi-district blending philosophy, Grange is arguably Australia’s most celebrated wine and is officially listed as a Heritage Icon of South Australia. Crafted utilising fully-ripe, intensely-flavoured and structured shiraz grapes, the result is a unique Australian style that is now recognised as one of the most consistent of the world’s great wines. With an unbroken line of vintages from the experimental 1951, Grange clearly demonstrates the synergy between shiraz and the soils and climates of South Australia. A fusion of preserved figs, black plum, blackberry and black liquorice flirts with an aromatic elution of fish oil, anchovy, soy and sesame/nori. Nascent scents of toasted charred meats (rotisserie rib of beef), rendered fat/marrow... An uplifting freshness and higher notes are liberated with air – awakened scents akin to cola, Chinotto, aniseed, root beer.Camouflaged (new!) oak has to be proactively sought out, verified.Strikes a Grange stylistic bullseye, all boxes ticked.
Saint & Scholar Chardonnay
A cheeky Chardonnay bursting to life with favoured summer fruits and textural prowess. Rock melon, mango, kiwi fruit and white peach dominate the nose, all fresh and exciting. Confectionary fruit tingles add an element of fun, but balanced by a savoury nutty creaminess. A honey toasted backbone, ensures there is just the right amount of complexity on this wonderfully crisp and pure nose, understated at best.
Acquesi Sparkling Moscato
Light and refreshing, this Sparkling Moscato from Piemonte bursts with peach flavours and a zesty citrus finish.
Domaine de Chatillon Gamay
A restrained savoury wine with vivid aromas and earthy tones with cranberry and cherries fruits. There are fresh cut violets, iris, and Pomegranate with a hint of cherry, plum, and raspberry. Subtle notes of potting soil form a backdrop to its sweet and flowery flavours. The wine has a moderate acidity combined with the tartness of red fruits and structural tannins. 93 Points - The Wine Front "Very light and transparent, gossamer texture, crisp acidity, barely there cherry flavours, cranberry tang and powdery tannins that pucker to finish. Some succulence here, the wine builds as it opens, but it will never be more than feathery and flighty, and lovely in that way. Pleasing, pleasant, delicate drink."
