A new release from The Macallan and one we were thrilled to learn of. Matured in a combination of American and European Sherry oak almost 50:50, though slightly weighted towards American oak ex-Sherry casks. New oak is shipped from America across to Spain, where expert Coopers craft casks. These casks are then sherry seasoned before traveling to the Speyside distillery to mature for twelve years. These whiskies are then united with counterparts aged in sherry seasoned European oak casks. The result is, as you might expect nothing short of seamless. On the palate youll find some spice along with some green fruits though the meat of the palate remains true to style, featuring fat caramelised sultanas, vanilla and wood spice. With a wholemeal and honey quality to the nose and the odd smoky tangent. A sweet, fruity core and a long round finish. Dalwhinnie has a little bit of everything, peat, honey and backbone. A classic malt for everyone.

Balvenie Caribbean Cask was created by The Balvenie Malt Master, David Stewart, who celebrated an incredible 50th anniversary at the distillery in 2012. This single malt has had a 14-year maturation period in traditional oak whisky casks, before being transferred to casks that previously held Caribbean rum to finish aging.

A superb 15 year old from the Highland Park distillery. The nose is a profusion of ripe floral notes and fresh blossom with a delectable fruit salad. Notes of honeyed exotic fruits with a little botrytis. The palate is creamy and full with fruit conserves and espresso. A creaminess with cinnamon and allspice. Notes of toffee with thick black forest honey with a touch more citrus. The finish is long and well sugared with a herbal edge.

Since 1896 all Mortlach whiskies have been 2.81 distilled. Unlike with any other whisky, our spirit criss-crosses between six copper stills of completely different silhouettes 0.81 more times than is Scotch tradition. It is an exact science graced with a touch of magic from The Wee Witchie.The Wee Witchie is the smallest of our six stills. Since it was first forged more than 120 years ago we have fastidiously ensured every dent and detail remains unchanged because it is within this copper chamber that the specific richness of taste which has earned Mortlach the reputation as The Beast of Dufftown is created. We dedicate this 12 year old Single Malt Scotch Whisky to the still that bears the beast. It has been double cask matured in both European and American oak to enhance the distinctively rich and robust character that makes Mortlach whiskies legendary.

The process of Scotland's slowest distillation can be tasted in every dram of this Cask Strength Single Malt by Glengoyne. Hand-crafted from inception to glass, this single malt also shows the dramatic effect of warm air drying of the barley rather that using peat smoke. Bottled at the higher ABV of 58.7%, the balance between the subtle flavours imparted from the slow distillation and the power of the un-chillfiltered single malt imparts flavours of digestive biscuits, ripe bananas and a hint of pepper.
