Heading down boards keep the cap submerged for better skin contact. The fermenters are temperature controlled to provide optimum conditions. Gentle extraction is achieved by the draining of wine from the skins and returning back over. Wine is then transferred to temperature controlled stainless steel tanks for maturation. This wonderfully elegant Shiraz shows intense, pristine, blackberry fruit and ripe, silky tannins. It almost has a Pinot Noir elegance to it and, luckily, the quality of future vintages will only be getting better too as Voyager's new clones come on line.

Still very youthful, the quality French oak riding high in the saddle. This is a wine of excellent quality, ticking every box. Its texture and balance are admirable, the varietal character likewise.

Rich mulberry, black cherries and soft white pepper on the nose followed by blackberry and dark cherries and layers of vanillan oak and dark chocolate on the palate.

Rosabrook was one of the first wine producing pioneers of the Margaret River region and their expertise is demonstrated in the palate of this medium bodied Shiraz with bright spicy fruit, a richly flavoured middle palate and a long spicy finish. Although Shiraz is a lesser known variety of this premium region, it's examples like this that mean it's gaining a growing following.

Dense aromas of plum pudding, dried apricots and eastern spice introduce a voluptuous palate, boasting silky tannin, delicate hints of fresh summer berries and earthier tones of toasted oak and freshly cracked allspice. Margaret River is an under appreciated region for Australian Shiraz, and it's hard to see why with Cape Mentelle's Shiraz showing a vibrant core of blueberry, mulberry and hints of raspberry. It is well balanced with cocoa and savoury oak. The palate yet, is fine, elegant and focussed, finishing with chalky and structural tannins.

TASTING: The aromas of this wine are bursting with vibrant fruits, succulent berries, and chewy jubes with a dash of pepper and spice. Flavours of licorice, and chocolate on the palate with smooth velvety tannins for along finish. WINEMAKING: Crafted from Shiraz grapes harvested from our finest block, this wine underwent fermentation in stainless steel tanks, preserving its vibrant freshness. Daily pump overs ensured thorough maceration of the skins, contributing to the wine's striking colour and tannin structure. After pressing, it matured for nearly a year in a blend of French, Hungarian, and American oak barrels,imparting depth and complexity.

Margaret River is renowned for its premium Siraz wines. This example emanates from one of Wilyabrup's a multi star rated Halliday Winereis. The fruit was harvested in Mid-April when the skin tannins are ripe and the flavours are bold. The whole berries add some spice and complexity to the wine. Aromas of glazed plums, cloves and cracked peppercorns give way to a rich palate with hints of citrus blossom, oyster shell and vanilla pod compliment a long and complex finish, further exhibiting a bright fruit core and pure longevity of pristine tannin. The fruit is de-stemmed with no crushing of the berries so that we begin whole berry fermentation. The whole berries seem to add some spice and complexity to the wine. Our Shiraz seems to enjoy relatively cool ferments, plenty of aeration and gentle treatment. The wine is gently pressed of skins, near dryness, based on taste.The bubbly purple wine finishes its fermentation in the presence of mainly French oak, with the smallest portion of American oak. The wine is racked when it has finished its malolactic fermentation, and then once or twice more over the season based on its individual requirements.
