Master Distiller Alex Davies of the Kyoto Distillery uses a spirit base distilled from rice and adds botanicals like yellow yuzu, hinoki (cypress) wood chips, bamboo, gyokuro tea, and green sanshō (Japanese peppercorn) berries that are designated into: base, citrus, tea, herbal, spice, and floral. Each botanical category is steeped into the rice spirit, which is then individually distilled before blending together. It is brought to proof using water from Fushimi, known for its purity. Aromas are big and robust with a touch of treacle toffee and sweet spice. This whiskey is full boded, it's dominate by praline, honey and caramelised fruits and toasted nuts. The finish is deep and is jammed with berries and dark chocolate.

No. 209 Chardonnay Barrel Reserve Gin initially shows a grassy nose followed by buttery-toffee and a hint of oak. The fist sip is subtly sweet and almost fruity, followed by a gin-inspired mid-palate with juniper, cardamom, orange and a hint of eucalyptus. Its finish is rich, long and lingering with a light tannin tang, the sweetness, toasted oak and a pronounced butterscotch note carrying on until the next sip. The Chardonnay Barrel Reserve Gin won a Master Medal in the Gin Masters Competition by the Spirits Business in 2018.
