Our barrel aged Gin is a small batch handcrafted Gin. It is made using a selection of old and new world botanicals. The Gin is then left in French and American Oak ex Barossa Valley Shiraz barrels, giving a smooth caramel richness to balance the citrus and juniper with a warm, woody finish.

Ten years in the making, this gin is the distillers masterpiece. Featuringg suspended finger lime caviar from the distillers own farm at Kurrajong Heights. The little balls pop in your mouth when you bite them releasing a 40% alcohol burst of finger lime gin which is different to the gin they are suspended in. A medley of Hawkesbury grown citrus Kaffir Lime, Tahitian lime leaves and Navelina orange makes this a gin experience like no other. Complex in its craft, but incredibly simple to enjoy as the perfect G&T. The bottle is mesmerising to look at and is often referred to as like a gin snowdome.

The aim with this Gin was to only use Tas native botanicals. I discovered some very impressive native berries, leaves and seeds however they could only be wild harvested which meant I could not get enough quantity to make it practical enough for an ongoing production. I have still been able to use some Tasmanian native botanicals however I have now broadened the list to only Australian native botanicals (plus the Juniper). Iam using 6 Native Australian botanicals with 3 of them never used before in any other Gin.All of my botanicals are vapour infused which is a technique not used too often with Australian Gins. Vapour infusion (as opposed to steeped) will give the Gin a much more delicate and subtle bouquet. My Gin is designed to smell beautiful. There will be delicate petal and citrus aromas with a hint of cut hay.

After a two-year mission foraging the landscapes of NZ for aromatic native plants that best compliment a classic dry gin, the brothers settled on Kawakawa, Manuka and Horopito making it a quintessential New Zealand gin.Juniper and floral notes followed by citrus. Our small batch Irish Gin is rested in casks made from Juniper wood. During this time the spirit takes on a beautiful copper colour and gentle sweetness. Juniper wood and juniper berry working together, that's what makes this gin rather special.
