A ¾ tonne bell with the name of 'Angelus' sits proudly atop the cellars at Wirra Wirra and heralds the beginning and end of vintage every year on the famous McLaren Vale estate. Previously the bell rang out from the Jesuit Church in Norwood thrice daily and due to this tradition, Wirra Wirra continue to name the bell and their very best Cabernet Sauvignon every year, The Angelus. Always a pungent and concentrated Cabernet with notes of cassis, cedar and trademark bitter chocolate bound with fine tannins. A propensity to age in the bottle for over a decade as well as its approachability early in life will appeal to all.

Chapel Hill are in the fortunate position to be the custodians of some of the most unique vineyard sites in McLaren Vale; showcased by The Gorge vineyard planted in 1993. With the gently undulating soils, which are derived from prized ancient rock formations, are further enhanced by the elevation as the site perfectly capitalises on the beneficial coastal influence. Shingleback have always been known for producing quality McLaren Vale wines at some fantastic prices. Take Red Knot for example! Here they re-launched their estate wines under the 'Davey Estate' label and concentrate on single sites. This Cabernet is wonderfully youthful and full of vibrancy. Fresh black fruit with roasted spice and superbly balanced tannins.

Sourced from vines over 60 years old, Olivers Taranga's reserve shiraz is a powerful wine. Rich, dark fruit balanced against notes of dark chocolate and spice. Throw in some super silky tannins and you've got one seriously smooth McLaren Vale beauty.

BK WINES Springs Hill Series Red Blend, McLaren Vale

Clarendon Hills is the living vision of one of the world's greatest Shiraz winemakers, Roman Bratasiuk. The dream was realised in 1990 and is now home to some of the most outstanding and hard to get single vineyard wines in Australia. The Astralis is the flagship wine in the Clarendon Hills portfolio, and while this vineyard is not treated any differently to the others, it garners the most worldwide attention due to its incredible expression and timeless elegance. From an Easterly aspect and planted on a 45 degree ascending slope, Australis has phenomenal varietal length and will repay the patient cellarer for more than 15 years.

Ingoldby McLaren Vale Shiraz is deep red in colour with purple hues. Red berries and plums on the nose, a spicy, peppery, plummy palate with good length of flavour and a smooth, lingering finish.

The EJ Shiraz is the jewel in Paxton's organic and biodynamic crown. Awarded 95 points in the Halliday Wine Companion 2017, this wine is the result of low yielding vines that are more than a century old. The flavour is elegant and round and the nose offers vanilla, black current and oak.

Made by Rose Kentish from Ulithorne at Domaine de la Sangliere, on the south coast of Provence, near Toulon. Vineyard and Vinification are run under organic principals. Pale Salmon-pink hue, a blend of Cinsault and Grenache. Fresh grapefruit with a hint of Rose Petals and red fruits of Strawberries and a long, dry, fresh finish.

Lloyd Reserve Shiraz is produced from a single vineyard at Coriole, planted in 1919 by Geoffrey Kay. It was first retained as a separate wine in 1989, and is one of Langton's Classified Wines of Australia. This vineyard typically produces a wine of great intensity and can be cellared for many years. The wine is matured in French oak with typically about 40% new.
