Billy Goats, our Queensland Gin is a small batch, handcrafted using a unique selection of Old and New World Botanicals. We have combined Australian Wheat spirit with gently soaked Juniper, the freshness of Ruby Red Grapefruit, Lemon Myrtle and Native Australian Finger Limes for a vibrant citrus burst. We were looking for a very approachable Gin that had enough citrus for a refreshing burst, but also with enough subtle botanicals to give complexity and depth. The original. Our Sydney Dry Gin is unlike any other. We steep 10 botanicals in Australian wheat spirit, which is then distilled in our little German copper still. You'll notice a classic juniper backbone complimented by fresh green apple, native strawberry gum leaf, and chamomile. It is an easy drinking gin - delicate, fresh, and floral. Four Pillars Gin worked with the QANTAS Rockpool mixology team to create the second release in their Bartender Series - an Asian-inspired Modern Australian gin with softness and spice, one that is truly a spirit of Australia. Red and green Szechuan give it a lovely warm mouthfeel, while the macadamia nuts give it softness and an almost creamy palate.
