Made using 100% Australian grown rye from a single farm in the Murray Mallee region of South Australia. The whiskey is aged in charred, new American oak barrels to embody the characteristics of traditional rye whiskey. Flavour notes: Sweet allspice, clove and pepper followed by dried red fruit and creme caramel.

Four Pillars sourced olive leaf and olive oil from Cobram Estate, in northern Victoria after visiting Cobram Estate during olive harvest. Using olive leaf and oil from the Picual, Hojiblanca and Coratina varieties. A Unique, herbed and buttered Gin produced in small 200L batches in the urban Darling Distillery. Layers of bright citrus from fragrant orange, mandarin and native myrtle melt into the warmth of Tasmanian pepperberry and the heady spice of coriander and lemongrass. Earth undertones of fresh picked rosemary and green tea are rounded by lashings of rooftop honey and the textural finish of freshly churned butter.
