Made using 100% Australian grown rye from a single farm in the Murray Mallee region of South Australia. The whiskey is aged in charred, new American oak barrels to embody the characteristics of traditional rye whiskey. Flavour notes: Sweet allspice, clove and pepper followed by dried red fruit and creme caramel.

Four Pillars sourced olive leaf and olive oil from Cobram Estate, in northern Victoria after visiting Cobram Estate during olive harvest. Using olive leaf and oil from the Picual, Hojiblanca and Coratina varieties. The aroma, flavour and texture of fresh olive is stunning, and they did a year of trials before finalising the recipe for this gin.The botanicals include a big base of juniper with a savoury overlay of coriander seed, rosemary, olive leaf, olive oil, bay leaf, lemon myrtle, macadamia, orris root, and fresh lemon and grapefruit. Fresh ingredients were vapour infused while the others macerated in the pot. This gin is savoury, textural and bright. Perfect for any Martini Gibson, dirty, or dry with a twist. A Unique, herbed and buttered Gin produced in small 200L batches in the urban Darling Distillery. Layers of bright citrus from fragrant orange, mandarin and native myrtle melt into the warmth of Tasmanian pepperberry and the heady spice of coriander and lemongrass. Earth undertones of fresh picked rosemary and green tea are rounded by lashings of rooftop honey and the textural finish of freshly churned butter.

Distilled using carefully selected native and local botanicals alongside organic Macedonian juniper berries, this easy sipping gin offers clean citrus notes with spicy finish. Native pepper berries and liquorice root give this gin earthy undertones, balanced with fresh notes of native ginger and lemongrass.
