Four Pillars sourced olive leaf and olive oil from Cobram Estate, in northern Victoria after visiting Cobram Estate during olive harvest. Using olive leaf and oil from the Picual, Hojiblanca and Coratina varieties. The aroma, flavour and texture of fresh olive is stunning, and they did a year of trials before finalising the recipe for this gin.The botanicals include a big base of juniper with a savoury overlay of coriander seed, rosemary, olive leaf, olive oil, bay leaf, lemon myrtle, macadamia, orris root, and fresh lemon and grapefruit. We macerate and boil the traditional botanicals while using the vapour-infused method for the Australian botanicals. This helps to balance a traditional gin base with the intensity of local botanical flavours. This unique Australian gin was recently recognised on the world stage, receiving a silver medal at the prestigious London Spirits Competition 2021.
