Chris Hatcher of 'Hatch Wines' has been a winemaker for almost 50 years including more than 35 years at Wolf Blass, 27 as Chief Winemaker. After many years of contemplating releasing his own wines, Hatch retired from TWE in June 2023 and then in October/November released my own label HATCH, his monicker for most of his life. Hatch Barossa St Johns Shiraz is a powerful, full bodied and opulent wine with vibrance and purity. Intense and concentrated with great aromatics of plum and dark cherry, the palate has dark red fruits, is round, soft with seductive oak and silky tannins.

Made from single vineyard to bottle. Low yields cool climate grapes from Nangkita. Deep sandy soil and limestone beneath, rich in elements for natural aromas and flavours. The wine is dark plum with lifted complex oak aroma. The palate has full flavour with rich berry fruit, warm, rich and intense. Upfront and splendidly appealing, the wine shows blackberry, sweet cherry, rich floral and vanillin oak notes, followed by a beautifully weighted palate that's plump and juicy, finishing lingering and silky. Sourced from vineyards surrounding Canberra, the Clonakilla O'Riada Shiraz has been lovingly embraced as little brother to the iconic Shiraz Viognier. Also co-fermented with a touch of Viognier, the O'Riada shows a more fruit forward presence, yet still with that unmistakable Tim Kirk elegance and purity that is a theme throughout all of his wines.

The Zema family has a proud history of producing great Coonawarra wines with plenty of regional character. This rich inky offering is redolent of ripe berries with a long satisfying finish.

St Hugo Cabernet Shiraz displays a dark ruby red with purple hues. The bouquet of dark forest fruits such as plum, blueberry and cassis lead into a beautifully complex palate of blackcurrent, sweet plum and chalky tannins. There is a underlying savoury oak hint and a finish of lingering dark chocolate.

Spinifex Bete Noir Shiraz has a potent herb infused fruit on attack. Spiced red plum, cherry and sage flavours with a saline edge are carried on mid-weight frame of strong black tea-like tannin. Barossa Shiraz with even temper - displays fleshy, dark and generous fruit measured by ripe acids and drying tannin.

In true McLaren Vale style, Serafino Magnitude Shiraz shows the rich fruit of the vintage, complex and integrated through maturation in French and American oak for 20 months.

Leeuwin's Art Label Shiraz has quickly established itself as one of Margaret River's best examples of the variety. Aromas of pepper and dark berry fruit are followed by a palate of length and class.

Very dark colour, complex nose of blackberry/mulberry and plums with a touch of oak spice, palate is rich and full flavoured with blackberry/dark plum fruit softly textured and layered structure with integrated vanillin oak and fine tannins on the finish. An iron fist in a velvet glove style which is well suited to quality grilled beef such as rib eye.
