This is our first of the MacAnn Sparkling series. 'MacAnn' is after our founders – my parents Mac & Ann – who discovered the Margaret River in the early 80s and fell in love with our vineyard in 1997. Bursting to say hello and invite you for banter, MacAnn Sparkling is a wine for celebrations and especially when celebrating life. MacAnn Sparkling is made from Semillon with a splash of Sauvignon Blanc in the traditional method. The grapes were picked in the early morning on 15th March 2019 and battonaged weekly for two months to make the sparkling base wine. Then into bottle on the 25th July on lees for 15 months. Disgorged on the 27th October 2020 with 4g/L.

The champagnes of Pierre Gimonnet & Fils are intricately assembled by masterful hands exclusively from enviably positioned and painstakingly tended old vines. Every cuvee sings its aspiration of 'precision, purity and minerality’, each speaking articulately of its place in the northern Cote des Blancs through expressive, chalky minerality, without one molecule of detail out of place.

Veuve Clicquot La Grande Dame is name in honour of the famed and undoubted Champagne pioneer, widow Clicquot. Widowed at the tender age of 28, Madame Clicquot continued her late husband's work and is the sole reason why her Champagne house is held in the high esteem that it is today. The 1998 La Grande Dame is a wine of pure beauty and power. A majority blend of Pinot Noir, the vintage conditions are clearly visible in the glass with flavours of peach, apricot and touch of brioche and nuttiness. A true classic for the ages.

Perrier-Jouët Belle Époque is one of the world's truly great elegant Champagnes. Named after the 'golden age' in France during the late 19th century, Belle Époque is still today bottled in the striking hand-painted bottle that is instantly recognisable the world over. A 50% Chardonnay, 45% Pinot Noir and 5% Pinot Meunier, the strength of this prestige cuvée is in its finesse and elegance rather than power or fruit. Perrier-Jouët Belle Époque is known throughout the world not only for their classic, complex and artisan sparkling wine, but also the magnificent artwork on each of the Belle Époque bottles. The artwork is a homage to glassmaker Emile Gallé who painted a special bottle that was found in 1902 in a nondescript cupboard gathering dust. The Belle Époque Rosé is a smooth and finely chiselled, subtle and rich wine, with myriad floral notes and a long finish, to be enjoyed as an aperitif, throughout the evening.

The Grande Réserve Brut Multi-vintage is the flagship wine of Gosset. Grapes are sourced from various Grand Cru and Premier Cru sites in the Marne Valley. The wine is a blend of 43% Chardonnay, 42% Pinot noir, and 15% Pinot Meunier with 12% reserve wines of an average age of 2 years. Malolactic fermentation is avoided to retain the vibrant, dry acidity that gives freshness to the Champagne. The wine is aged on yeast for 4 years prior to disgorgement and release. The Grande Reserve Brut MV epitomises Gossets signature; complexity with freshness. Replete with delicious biscuity notes, fine bead and creamy mousse, this superb Champagne will delight at every occasion.

Like Sullivans Cove Single Cask whiskies, XO Single Cask Brandy is bottled one cask at a time, allowing each to express its own unique character and producing only a very few bottles of rare quality. This brandy will strike a chord with single malt whisky drinkers due to its intense depth, rich complexity and balanced elegance.

Elegant, with colour changing naturally from a pretty raspberry hue to salmon-pink. The maceration lasting from 48h to 72h depending on the harvest helps the extraction of the colour and the development of the full aromatic richness of the Pinot Noir, with 5 years minimum ageing.
