The Whistler Mosaic Marsala Cask is a fantastic example of a premium, small batch Single Grain whiskey from Ireland. This unique single grain Irish whiskey has been initially matured in ex-bourbon casks before being finished in exquisite Sicilian Marsala casks. This creates a perfectly balanced whiskey which boasts a deliciously fruity and flavoursome nose and palate to match.

Nose: Apple drops, fresh citrus zest, creamy and luscious toffee undertones with banana, apricot, melon and creamy red raspberries. Palate: Sweet peach on the fore with pear and a bright fresh citrus zest. Malt undertone with creamy vanilla underneath Finish: Long and creamy with hints of pear and citrus zest remaining.

The Whistler 5 Year Old Bodega Cask Single Malt is a triple distilled whiskey that has been wholly matured in the finest Spanish Sherry Butts for its whole life. These butts were sourced from our partners in the famed Bodegas of Jerez de la Frontera.

Grace O’Malley Irish Whiskey is a special blend, combining multiple batches of whiskey of varying age statements from three to 10 years old. Each batch of whiskey is matured in a range of barrel types, including French oak. Casks are hand selected according to each whiskey’s characteristics, including grain whiskey aged in ex-bourbon casks and malt whiskey aged in ex-rum barrels. The resulting blend delivers a whiskey perfectly balanced between flavour, age character, complexity and smoothness.

Our Double Barrel has sucked the marrow out of two casks, Bourbon and Oloroso. They each bring their own unique flavour and character. While the Bourbon barrels add, among other things, sweet, smooth vanilla notes, the Oloroso casks layer on those dried fruit and slightly nutty flavours. And of course these are all accented by almost four years resting in Ireland’s mild maritime climate.
