Hay Shed Hill Vineyard Series Cabernet Merlot
Deep crimson red of good intensity and vibrant hue. Intense berry fruits, cassis and chocolate mint characters notes with background cedar like oak. Medium bodied, this wine shows a vibrant and lively fruit driven palate with a fleshy middle and soft mature ripe tannin. Cabernet Sauvignon and Merlot grapes from the Hay Shed Hill vineyard were harvested and de-stemmed into open topped vessels for fermentation on skins with traditional pump-over cap management to aid colour and flavour extraction. The wine was matured in French oak barrels for 13 months allowing integration of fine oak and development of the soft ripe tannin The Hay Shed Hill vineyard is situated on a picturesque property that was established as a group settlement farm for returned soldiers from the First World War. Known as Sussex Vale the property was originally a dairy farm. The current homestead, considerably renovated, still has much of the original Group Settlement look and feel. Vines were first planted in the early 1970s. In the late 1980s the vineyard was bought by the Morrison Family and the wine brand Hay Shed Hill was established taking its name from the local reference to the hay shed located on the property. The sister label, Pitchfork, was developed to complement the single vineyard Hay Shed Hill label. A series of ownership changes saw numerous alterations to labels, wine style and distribution until the current group of partners bought back the farm and the brand in late 2006 and returned to the original concept of producing wine with integrity that expresses the quality of the site.
Flying Fish Cove Wildberry Estate Cabernet

Bouquet:Black and red berry fruit are complemented by earthy graphite and dark chocolate notes. Maturation in seasoned French oak gives a subtle background of vanilla and spice. Palate:Medium bodied and vibrant palate sums up this wonderful expression of Wilyabrup Cabernet. The palate is fresh and full of vibrant mulberry, cassis and black cherry flavours. Mature, ripe and fresh tannin drives the flavour to a long and persistent finish. Viticulture This Cabernet Sauvignon was grown in the Wilyabrup sub region of Margaret River. The canopy management is a vertical shoot position trellis with a north south facing aspect. The clonal selection is the popular Houghton selection Cabernet Sauvignon. Soil types are typically sandy loam over free draining lateritic sub soils. 2021 is typified by a cool and mild growing season which has culminated in wines of delicacy and poise. Winemaking The fruit was picked on the 11th April showing excellent flavours and tannin maturity. Lightly crushed fruit was then placed to a static fermenter for a further 13 days of fermentation with daily pump overs to ensure a moderate fermentation temperature and extraction of tannin. Once the desirable amount of flavour and tannin was evident the wine was pressed before being matured in seasoned French oak for a following 9 months before bottling. The Lone Quince Cab Merlot
Grape Varieties: Cabernet Sauvignon 86%; Merlot 14% Purple with crimson edges looks serious in the glass. Tobacco leaf feint cassis purple plums a complex nose which adds weight to the serious theme. Quality MR Cabernet leads the charge here. A wine with high cheek- bones. Just ripe cabernet gives this sinew and poise. Merlot is subservient almost hard to detect. Terrific wine, at almost twice the price.
Howard Park Miamup Cabernet Sauvignon
This beautiful wine displays an attractive ruby red colour in a glass. The well balanced bouquet emits medium intensity fragrances of blackberry, dried herbs and earth. It offers coffee, toasted oak and vanilla characters towards the end. The nose smoothly makes way for a lush palate, filled with flavours of juicy forest fruits and soft vanilla, leading to savoury notes. Together with palate coating tannins, these characters culminate in a cocoa and coffee dominated finish.

Vinaceous Raconteur Cabernet Sauvignon
The Raconteur is sourced from Carl Linder's 80 year old Cabernet Sauvignon Vineyard located in the Barossa Valley; these old vines are hand harvested and made using traditional techniques by Vinaceous contract winemaker Elena Brooks (Dandelion Vineyards). The wine is matured in oak and selected by Vinaceous Winemakers Mike Kerrigan and Nick Stacy and sent to West Cape Howe Wine (WA) for finishing, fining, blending and bottling by Vinaceous. The Raconteur 'breaks the mold' for Barossa Cabernet; lush, rich and deep purple in colour with bright hues, the aroma leaps from the glass with violets and black berry and mocha notes. Ripe fleshy black currants and cassis complement the overall palate with intensity, weight, structure and texture. Along with lip-smacking tannins and fine oak nuances, the Raconteur can easily be enjoyed on immediate opening or be cellared in the short term.
Robert Oatley Signature Series Cabernet Sauvignon
This bold Cabernet Sauvignon was crafted using premium fruit parcels sourced from lush vineyards in the Margaret River wine region. The grapes were picked at perfect tannin ripeness, fermented, and aged for a period of 12 to 15 months in French oak barrels. The resulting dry red wine displays an inky red / purple colour, and exudes vibrant aromas and flavours of blackberries and dried leaves. This full flavoured palate combines with finely structured tannins to provide a textured and captivating finish. This elegant wine can be cellared for a decade from vintage. Pair it with dishes like braised beef short ribs, garlic chicken wings, and zucchini gratin with tomato confit, to fully appreciate its satisfying flavours.
Pitchfork Shiraz
Vibrant youthful brilliant hue of good depth. Ripe cherry and plum fruits with chocolatey influences. The palate displays good depth of fruit concentration, ripe sweet fruit fleshiness in the mid-palate and good flavour extension.

Gentle extraction is achieved by the draining of wine from the skins and returning back over. Wine is then transferred to temperature controlled stainless steel tanks for maturation. Modern white wine making techniques were used with temperature control critical from the vineyard through to the winery. The fruit was de-stemmed and crushed then must chilled and pressed off the skins quickly. It was allowed to settle for 72 hours before being racked in a clarified state to a fermentation tank. Each variety was kept separately with a range of different yeast being employed on the two different parcels. It was then transferred to temperature controlled steel tanks.
