Elegant, with colour changing naturally from a pretty raspberry hue to salmon-pink. Pinot Noir from 10 different crus located mainly in the South and North areas of the Montagne de Reims including the famous Côte de Bouzy. Notably from the finest crus of Ambonnay, Bouzy, Louvois and Tours-sur-Marne. The grapes from carefully selected plots are sorted and destemmed before vatting. The maceration lasting from 48h to 72h depending on the harvest helps the extraction of the colour and the development of the full aromatic richness of the Pinot Noir, with 5 years minimum ageing.

From the 100 hectares acquired in 1850 by Louis Roederer, the Domaine today extends over 240 hectares averaging 98% on the official Echelle classification. All vineyard acquisitions follow Louis Roedererâs strict 70% policy â that is ownership of at least 70% of the total production. All Louis Roederer Cuvees are Estate grown with the exception of Brut Premier which is 60% estate fruit and 40% fruit sourced from long-term contracted growers. Louis Roederer farm 65 Ha of their Domaine vineyards under a biodynamic and organic regime as part of what Chef de Cave Jean-Baptiste Lécaillon says is a work in progress. In 2012 Louis Roederer became the largest biodynamic producer in Champagne.

Cos d'Estournel remains today one of the true icons of Bordeaux, and the trademark of Saint Estèphe. With it's pagoda like house (as it's one of the rare Bordeaux's without a Château) it is a must visit for all travelling along the route des châteaux. Always of great reputation, the wines soared in esteem throughout the tenure of Bruno Prats through 1971 to 1998 and continue to this day with their Cabernet Sauvignon based wines of extreme purity and elegance. The 2009 vintage will be highly sought after with the conditions in the left bank region at their very best. Showing a more riper, plump fruit nature than the usual masculine, long-lived trademark, this years Cos will be quick out the door.

Named in honour of founding father Nicolas Francois, this fabulous wine is the finest expression of the House Style. A pale golden colour with a lively, fine bead. The nose shows very ripe fruit, floral notes and hints of warm brioche. The palate is fine, elegant and rich with wonderful balance and length. Cuvee Nicolas-Francois Billecart 1959 won first place in the Champagne of the Millennium 1999, out of 150 of the finest 20th century champagnes.

Château Figeac is a wine estate that had a very long history. It was once part of the Cheval Blanc estate, whichs soils was well known to be two-thirds of gravel, allowing Cab Sauv, Cab Franc and Merlot to grow flourishingly in the area. The 2010 Figeac, had a beautiful complexity to enjoy now or the longevity to cellar for those who prefers. Wine will benefit from decanting.
