Aged for extended time on its yeast lees, it has complex fruit and with ageing is still fresh with strawberries, cherries and Granny Smith apples. Penfolds Bin 23 Adelaide Hills Pinot Noir is named after the maturation Cellar 23 at Magill Estate. Bin 23 Pinot Noir is a bold, new addition to the Bin collection and promises to be a dynamic member of the Bin family - reflecting its evolving style, regional definition and the complexities of the many & varied clones of Pinot Noir.

These traditional sparkling varieties of Chardonnay, Pinot Noir and Pinot Meunier are sourced from the cool climate Adelaide Hills, and are picked early to retain high natural acidity. Small batches of these low yielding grapes are gently pressed in stainless stell basket presses. Following primary and partial malolactic fermentation the inidividual parcels are bottled and inoculated with yeast and sugar to encourage secondary fermentation. The cuvee is fermented in the bottle to develop complexity for approximately four years. This is a dry style sparkling with minerality, a crisp acid backbone and layers of flowers, fruits and toasty savoury nuances.

Hilary Adelaide Hills Chardonnay is a thoroughly modern and elegant Australian Chardonnay that offers a creamy style with subtle flavours and approachable character. The restrained use of oak balances the quintessential Adelaide Hills fruit character.Quintessential Adelaide Hills with white nectarine, lemon curd and hazelnut aromas, and underlying mineral characters in the background. Palate shows restraint with a nougat and creamy elegance. Subtle flavours along with the typical regional acid line bring freshness and length.

Sourced and grown in the Adelaide Hills, this is a fine example of how good Chardonnay from this region can be. This is a blend of 3 different cultivars of the Chardonnay grape. Bunch pressed and in part wild fermented. Partial malolactic fermentation imparts further complexity. A beautifully textured and complex wine.
