Coffey Malt is made from 100% malted barley. However it is not categorized as malt whisky but as grain whisky since it is not distilled in a pot still. This unique production method results in extraordinary flavours and texture.

Not strictly a Japanese whisky, Togouchi source grain whiskies from Scotland & Canada and aged them in Japan. This is a blend from Chugoku Jozo, who mature their whiskies in a tunnel rather than a warehouse. The temperature of the tunnel is always 15 degrees while the temperature of the cellar at the headquarters in Hatsukaichi city is a little higher than that. Nutty, spicy whisky with a lovely butterscotch mouth feel. On the palate it expresses vanilla sweetness and a fine peat iodine, with hazelnuts and chocolate on the finish. Almost feels like a whisky/bourbon hybrid.

Both the whisky distillery and craft brewery use pure mineral water from the mountain in their facilities and production. Whisky maturation is encouraged by short hot summers, with long cold winters providing a slow and gentle maturation and a break. For the 2020 release of the Mars Komagatake IPA Cask Finish Single Malt Japanese Whisky, traditional oak barrels were used for the 3 year maturation. Following this, the single malt is aged further in casks used for the production of Indian Pale Ale. This provides a subtle and unique essence of beer character.

Fresh wood barrel dominates the spirit with a touch of vanilla and flowers that bring to breath of nectar, maltose, tones of fruits citrus, Mizunara oak & coffee beans; medium wood intergration, then finish with a sweet aftertaste of maltose. Very smooth, rounded full pallet and easy to drink.

Mars Cosmo is aged in Sherry, Bourbon, and American white oak casks. Cosmo, is the name of a mountain in the Japan Central Alps, closed to the Mars Shinshu distillery. This is a limited bottling of Cosmo, which has been extra-seasoned in red wine casks. Shiny ruby red colour is extracted from red wine casks. On the nose, fruitiness and warm spiciness are present. It has a soft round mouth feel, and Umami from the red wine cask interact very well with Cosmo's ripe fruit character with vanilla and cinnamon flavours as a result of further maturation in red wine casks. A long finish with elegant tannins and black tea.

Fuji whiskey was born out of a joint venture in 1972 between Kirin Brewery, Chivas brothers and Seagram and Sons to identify the optimal site for a new whisky distillery in Japan. The water in this whisky comes from snowmelt run-off from Mount Fuji, which takes about 50 years to cycle. A proprietary yeast is used for fermenting the various grains over a 72 hour fermentation period. Three distillation formats are employed: column (lighter style), batch kettle (medium style) and pot still (heavy style). The whiskey is aged in medium to high char ex bourbon barrels, refill and virgin oak. It is non–chill filtered and bottled at 46% ABV.
