Umamu create exquisite handcrafted wines from Margaret River. Each bottle is deliberately and meticulously created: from the delicate balance tasted within each glass, to the small touches of family handwriting and messages on our labels. Our philosophy has always been to give our wines time to develop in the bottle before release, a rarity in today’s market. Enjoying wines when they are ready to drink, rather than straight after bottling, when the wine has had time to develop and balance up in the bottle with no screaming parts. This cane cut is produced from Sauvignon Blanc vines planted in 1987. Hand harvested on the 17th of April at 23 baume. Fruit cold crushed to press and cold settled before a 12 o C ferment in barrel. Aged on light lees for four months before bottling.

Wine description: Aromatic dried herbs and wildflowers with a fruity bouquet and flavours of guava, honeydew melon and pear. A subtle burst of citrus and pleasant acid delivers nice harmony and a long dry finish to the sweetly fruited palate. winemakers comments: Our Pinot Gris is made from fruit grown on our Tiger, and Sinclair vineyards in the Parkburn area of Cromwell. All the grapes are hand harvested and fermented in small lots in stainless steel tanks helping to retain fruit purity and finesse. The wine is full, dry, and textural, and displays excellent fruit structure, intensity, and mineral length. harvest: in bottle: Date: 15th & 19th April 2023, pH: 3.45. R de Rieussec, Château Rieussec's dry white wine, is a blend of 59% Sauvignon Blanc and 41% Sémillon, with 20% fermented in barrels to enhance aging potential. Paul Scorpo produces a Chardonnay of complexity and character here. Aromas of nectarine, minerals and vanilla bean give way to a mouthfeel of peach and citrus and a lovely acid backbone. A truly full-bodied Chardonnay for those who love their barrel ferment and textured styles.

Clonakilla are famous for Viognier, but in two different guises. One as the compliment to the exceptional and etheral Shiraz Viognier that has catapulted Tim Kirk to winemaking fame around the world, the other as this wonderfully textured and veluptuous white wine. Full-bodied with potent honeysuckle, pear, ginger and apricot aromas.

A fine and quite flinty modern expression of Margaret River Chardonnay. Finer and leaner it might be in some ways, but the unmistakable power and persistence of the region still triumphs. Complex mealy grapefruit and roasted nut characters on the nose, and a deep and richly intense palate power through to the finish.

Felton Road Block 2 Chardonnay comes from a special parcel in the Elms vineyard on a gentle east facing slope, schist gravel soils and Felton Road's oldest Chardonnay vines. With natural hands on winemaking, results in a wine that expresses a true sense of place.
