Cape Mentelle's Cabernet Sauvignon under the guidance of Rob Mann has become one of Australia's most prestigious Cabernet's. Sourced from what many believe to be the true home to Cabernet in Australia, the Margaret River, Cape Mentelle produce a wine that has a plush full-flavoured palate of concentrated blackcurrants and mulberries with a minerally spine. Richly textured and vibrant the palate finishes long with fine yet firm gravelly tannins. A superb candidate for some medium to long term cellaring.

Surrounded by Chablis vineyards on all sides, the family estate was founded in 1973 by Jean-Marc Brocard, who has since been joined by his son Julien. The estate spans almost 200 hectares, 66 of which are certified organic. Of all the Chablis Grands Crus, Vaudésir is the most delicate. Its lively, elegant character is utterly seductive. One of the rare Penfolds wines that is 100% single-regional, the Reserve Bin A Chardonnay is sourced from super premium sites in the Adelaide Hills resulting in a fresh, mineral style that lies at the forefront of the modern Chardonnay style. A wine that will always be linked with 'White Grange', Penfolds Yattarna: This 2014 vintage shows a palate of Granny Smith apples, lemon curd with a pure chalky texture and a lengthy finish.

As Australian Chardonnay continues its re-emergence, Vasse Felix Heytesbury is firmly leading the charge with its complex, modern style that has seen the winemaking team take home a cabinet full of trophies and gold medals in recent years. 100% wild yeast fermented and matured in French oak for only nine months, there is a power and persistence that is unmistakable. A flavour cavalcade of matchstick, citrus, white peach and grapefruit alongside a subtle toasty, nutty aspect from the sublime oak regime. Margaret River is a world renowned Chardonnay producing region and Pierro can rightfully stake a claim as to why. Incredibly complex, it is a tangle of fine-boned acid, lees complexity, pristine fruit and the most detailed use of good quality oak. Extremely enjoyable now, but will benefit from short to medium term cellaring.

Woodlands, established in 1973, has emerged as one of the regions important producers of Cabernet Sauvignon. The original, dry-grown 3.2 hectares, planted between 1973 and 1976, has now expanded to 10.5 hectares. The sandy and gravelly red/brown loams over lateritic sub-soils are well suited to Cabernet Sauvignon. Organic and biodynamic principles are gradually being introduced. Batch-vinification in open and closed, stainless-steel fermenters with minute parcels of Malbec optimises fruit complexity. Typically the wine shows cassis/ black fruit/ cedar aromas, fine-grained tannins and underlying savoury oak.
