Headlands Distilling Co. was founded in 2015 by four friends, with nothing more than a goal to produce unique, handcrafted spirits. Featuring two science PhD’s- Lachie and Thomas, an organic chemist/chemical engineer- Jared, and a business specialist, Dean, each member of the team brings an individual set of useful skills. Headlands Distilling Co. focuses on two main areas. Crafting delicious spirits completely from scratch on site and creating tasting experiences which have not been done before. Liqueur of the Illawarra Plum is rich, velvety & smooth. The consistency and taste is similar to that of a Port or Sherry; perfect for sipping neat after dinner with dark chocolate or enjoyed over a scoop of ice cream. The rare, native Illawarra Plum (Daalgaal) is hand foraged from along the coastline. Following in-house fermentation and distillation, the spirit is barrel aged on the plum skins, amplifying the flavour profile.

Vickers is a beautifully flavoured Gin subtle hints of delicious juniper berries. Dry but refreshing this Gin, unlike others is enjoyed most in a tall glass rather than short and is best accompanied with a traditional twist of lemon and tonic water.

The finest Australian sugarcane molasses are mixed with rainwater and small batch fermented, only the softest & finest spirit cuts are copper-pot distilled and charcoal filtered to crystal clarity. The result, a vodka that is exceptionally smooth while retaining some of its natural sweetness. On the palate, it has a beautifully smooth mouth-feel with evidence of sweetness from its sugarcane origins, a lingering, silky finish. Excellent in cocktails, with your favorite mixer or over ice.

Ageing in Oak Barrels for a minimum of two years we have a refined and elegant rum that is then paired with caramel and sea salt to produce the nectar of the gods, Capricorn Salted Caramel Rum Liqueur. Capricorn Salted Caramel Rum Liqueur is slightly sweet, however there is a focus on highlighting our aged rum. Its delicious and can be served many different ways. Hartshorn Vanilla Whey Liqueur 17.5% 375ml A beautiful Vanilla bean infused liqueur that has similar flavour to custard or Bailies. Made from our sheep milk whey.Best served on the rocks with chilled apple juice to create the drink I call Apple Crumble. The liqueur acts as the custard and the juice as the apple pie.Our liqueur has also been used in restaurants as a base for Creme Brulee and Panna Cotta. Also great used as a custard over fruit salad or apple crumble.
