The Macallan Sherry Oak 12 Year Old is matured exclusively in hand-picked sherry seasoned oak casks from Jerez, adding richness and complexity. A matured character, the 12 Years Old delivers rich wood spice and dried fruits and a natural rich gold colour.

A new release from The Macallan and one we were thrilled to learn of. Matured in a combination of American and European Sherry oak almost 50:50, though slightly weighted towards American oak ex-Sherry casks. New oak is shipped from America across to Spain, where expert Coopers craft casks. These casks are then sherry seasoned before traveling to the Speyside distillery to mature for twelve years. These whiskies are then united with counterparts aged in sherry seasoned European oak casks. The result is, as you might expect nothing short of seamless. On the palate youll find some spice along with some green fruits though the meat of the palate remains true to style, featuring fat caramelised sultanas, vanilla and wood spice. Shinobu Whisky is hand crafted by the creative distiller, Mr. Usami, by carefully selecting whisky from around the world which are first reserved in ex-sherry and ex-bourbon casks and then finishing them with precious Japanese Mizunara oak in Japan. The result is a unique fusion of flavours and dynamic explosion in palate yet so smooth and easy to drink. All natural with no colouring.

The distillery is situated north of the traditional highlands, drawing its water from the Alness River, near the city of Inverness. This single malt is a toasty, coffee-rich dram with beautifully spice notes and a thick mouthfeel. The nose is rich in roast beans, the oily nuttiness in a fine espresso with little notes of malt, cereal followed by butter and pastry aromas. The palate is filled full of marmalade and triple sec with winter spices and fruitcake. Zesty cocoa and milk chocolate are also a feature of this very rich 12 year old.

Our Ex-pinot cask Single Malt Whisky is matured using 20L and 100L Barrels in our 1840s stable. A stunning caramel colour with brown sugar on the nose, a long finish and smooth palate. Enjoy neat or over ice.

Made and bottled in Albany, WA this complex and elegant single malt whisky is distilled in traditional small batch copper pot stills from local barley. Thjis malt is aged in American brandy casks before being finished in sherry casks. Initially aged in American oak ex-bourbon casks followed by aging in Australian sherry casks, this is a special whisky filled to the brim with character.
