Penfolds Bin 389 is the classic South Australian red! Penfolds Bin 407 began life back in 1993 with the release of the 1990 vintage Cabernet Sauvignon. Created as a result of the availability of high quality Cabernet fruit, Bin 407 is inspired by its older brother, Bin 707. Not only offering varietal definition, but also approachability, structure and depth of flavour. The Bin 407 highlights the Penfolds approach to multi-region, multi-vineyard blending to create a Cabernet that rewards the drinker in both early and later years.

Woodlands, established in 1973, has emerged as one of the regions important producers of Cabernet Sauvignon. The original, dry-grown 3.2 hectares, planted between 1973 and 1976, has now expanded to 10.5 hectares. The sandy and gravelly red/brown loams over lateritic sub-soils are well suited to Cabernet Sauvignon. Organic and biodynamic principles are gradually being introduced. Batch-vinification in open and closed, stainless-steel fermenters with minute parcels of Malbec optimises fruit complexity. Typically the wine shows cassis/ black fruit/ cedar aromas, fine-grained tannins and underlying savoury oak.

The palate is complex and fruit-driven, filled with vibrant flavours of blackcurrant and spicy hints, and integrated with a fine-grained tannin structure, ultimately culminating in a clean and lingering climax.

Chris Ringland Limit Lodge Cabernet Mataro is a blend of exceptional fruit from exceptional vineyards, a new style from winemaker Chris Ringland and grape grower Adrian Hoffmann. The name Limit Lodge comes from a historical parcel within the Hoffmann vineyards, and is also appropriate given the limited number of bottles made. Matured in aged French oak, this is a juicy Cabernet blend rich in dark, plummy fruits with savoury notes of bittersweet chocolate, coffee, and anise. The finish is long with mouth-coating tannins, and a slight salinity. Plenty of potential for ageing.

While the estate known as Chateau Haut-Bailly dates back to 1461, its wine production began in 1530, falling into the hands of the de Leuvarde and Le Bailly families in 1630. It was purchased in 1998 by Robert G Wilmers, a Harvard-educated banker, and his French wife Elisabeth and under their care, the estate has begun producing some of the best wines in its history. The cellars and production procedures were renovated and modernised and this year, the Chateau itself was awarded government recognition of its cultural and vinious heritage.
