Seductive from the first sniff. Certainly got me interested. Remarkably soft and supple Cabernet with almost cashmere fine tannins and an effortlessly smooth and long palate structure. Slightly chalky tannins add some balance and the follow though to the finish is extravagant and stylish.

No MLF to retain natural acidity and freshness. Post-fermentation the lees were stirred gently once a week until the balance between oak, lees characters and fruit characters was achieved. The origin of Rockcliffe was an 18 acre expanse of apple orchards planted early in the 1900s in the rich Scotsdale Valley region of Denmark in the Great Southern, Western Australia. In the late 1980s, a local family acquired the property for its fertile soils and position for long afternoon sunshine with cool ocean breezes. It was christened Matildas Meadow and the planting of dry grown vines commenced. The Pinot and Chardonnay vines were the first planted in the district in 1987. The team at Hay Shed Hill has selected the best vineyard blocks on their Margaret River estate to create the Block Series. The fruit for this wine comes from some of the oldest Semillon and Sauvignon Blanc vines in the region. Full straw with yellow green hue, it presents a plush honeydew melon and warm honey mix with guava and lime juice generosity. The developing palate has a mouth-filling and harmonious mix of lime and melon with deeper traces of tropical fruits and touches of biscuit and honey chiming in on the finish. A complex barrel fermented style and ready to drink.
