The house of Besserat de Bellefon was founded in 1843 near Ay in Champagne, and is now based in Epernay. This Katherines Paddock Chardonnay combines the richness, drive and classicism of one clone with the fine-boned flinty structure and chalky notes of the other. It is stylish with the modern expression of Australian style Chardonnay: tense, taut and sulphidic. It reclaims the middle ground where body, flavour and palate weight co-exist with structure, texture and restrained acidity. This single-vineyard Chardonnay has well integrated natural acidity with rich varietal expression.

This parcel is located on the upper slopes above the Meursault 1er Cru Genevrières appellation. The clay/limestone soil has a subsoil of extremely hard white rock riddled with fissures. These allow the roots to circulate through the white limestone. The parcels southern exposure, coupled with a steady 20% slope, affords the grapes excellent ventilation leading to a harvest that is both ripe and healthy. The wine often presents aromas of candied orange (or other citrus fruits) on the nose and in the mouth.

A concentrated dark fruit spectrum with an abundance of ripe blackcurrants, cherries and a hint of cassis. Coffee bean, dark chocolate and black olives lie beneath. Subtle dustiness combines with a seductive violet lift, enhancing the varietal fragrance and increasing complexity. A dense and layered palate with incredible texture. The generosity of the palate is carefully laced with a fine and structural acid line. Dark cherries and currants weave through smokey and mocha notes, finishing with long tactile tannins.
