Undoubtedly one of Australia's greatest Chardonnay's, the Oakridge 864 wine is terroir-driven. Made to demonstrate the importance of time and place with every bottle. This wine is comparable to top-end Burgundies. Ageing has enabled the acidity to slightly soften and the regional minerality to come to the fore, meaning the 2012 vintage is definitely one for the collection!

This delightful Yarra Valley Light Red Blend is 50% Shiraz, 50% Pinot Noir, and is beautifully robust yet soft and generous. In the glass: Medium red purple. On the nose: Beautifully perfumed black cherry, blood plum, whole bunch spice and peppery lift. On the palate: Elegant yet powerful with a fine web of tannins underpinning the complex mixof silken red and black fruit. It features notes of clove and five spice with bright acidity.

WinemakingAll fruit was hand-picked and whole-bunch pressed. The cuvee taille (first cut free-run juice) was settled naturally overnight prior to racking to a mix of stainless steel tank and large format old barrels for fermentation.Fermented and aged separately in small batch lots on settled lees for nine months. The blended wine then underwent secondary fermentation in the bottle. This wine has been aged for an extended period on its autolysing yeast lees for more than four years to garner richness and complexity to its innate elegance and finesse.Winemaker's notesThe protracted growing season allowed a drawn-out ripening, resulting in an uncommon richness of flavour tempered by the abundant natural acidity contributed by the season.A bouquet of nashi pear, glazed brioche, lemon cheesecake and Amaretti buscuit. Flavours of nougat, lemon rind, jasmine and chestnut underpin a palate of steely acidity with delicated bubble, fruit weight and earthy 'sur lie' characters providing textural accompaniement, richness and creaminess to the finish. An excellent match for freshly-shucked oysters or semi-hard cow's milk cheeses.

Paringa Estate's The Paringa Shiraz is a multi-trophy winning wine that has been carefully selected from barrels prior to bottling due to the stand-out quality that was easily identifiable. Phil first made his name in establishing some noted micro-breweries, such as Little Creatures, and later established Devils Lair in Margaret River. First released in 2001, Giant Steps focuses exclusively on the distinctive expression of single vineyard sites in the Yarra Valley. Grapes are drawn from estate and leased vineyards, as well as a selection of long-term contracted vineyards. Giant Steps wines are produced fastidiously in the vineyard and vinified with minimal intervention so that each is a faithful expression of site, vintage and culture. Giant Steps focuses on restrained Chardonnay, Pinot Noir and cool climate Cabernet/Merlot blends. These single vineyard wines are sourced from five different vineyards throughout the Yarra, so each is a fingerprint of location and site personality. The name Giant Steps comes in part from Phils love for jazz and John Coltranes album of that same name, and in part due the Giant Step Phil took in relocating with his family from Margaret River to the Yarra Valley. Giant Steps wines are always exclusively single vineyard Yarra Valley wines. They are hand made in small batches using gravity flow principles. Production of the Giant Steps wines is very limited with some vineyards producing as little as 200 cases each vintage some wines are not produced each year if vintage conditions do not allow. These wines are often hard to find in retail outlets as they are mainly sold through the cellar door and through selected restaurants.
