This is a classic Wilyabrup Cabernet – but with a twist. Rather than crafting a cabernet with massive architecture, we wanted to table a wine that dispensed with a poignant tannic structure, yet still delivered on the beauty that is Cabernet from this region.

An elegant palate with flavours of dried plum, forest fruits and mocha, with some savoury notes. Tight, fine tannins provide length and structure, to this wine that finishes with dark chocolate notes.

Fruit tannin and bold flavours of mulberries and wet slate. A focused core of fine textures and glazed cherries culminates in a mineral and persistent finish.

Margaret River is renowned for its premium Cabernet Sauvignons. This example emanates from this multi star rated Halliday Winery in the Yallingup Sub-Region. A fine balanced wine, with a long palate that shows finesse.Ø WINEMAKING Each parcel of fruit is gently crushed and transferred into small open fermenters. Before fermentation starts the juice is concentrated by removing 15% of the volume. This facilitates a greater intensity of flavour. Heading down boards keep the cap submerged for better skin contact. The fermenters are temperature controlled to provide optimum conditions. Gentle extraction is achieved by the draining of wine from the skins and returning back over. Cabernet Merlot is a quentissential Margaret River blend. The grapes for this wine are dry grown on rich Karri loam and gravel soil at the KarriBindi vineyard.Cabernet Sauvignon brings the richness and structure while Merlot contributes beautiful fragrant aromas, complimentary flavours and softness.This wine is deep, dark red in colour with aromas of red currant and plum which lead to a smooth palate of luscious red berry fruits with hints of cassis and coffee bean. It has a succulent tannin structure with fine length complimenting the depth of fruit flavours.

Our first Cabernet Merlot was produced in 1982. We have always felt that the Merlot grape variety enhanced the Cabernet and in this case at 29%, the Merlot is more than a bit player. Indeed tasters sometimes suggest that the Merlot is dominant, with its velvety, rounded character. Merlot extends the flavour, enhances the finish and performs in a very positive fashion.

The juicy grapes used to produce Best Blocks Cabernet Sauvignon were harvested, and crushed into stainless steel fermenters. The juice obtained was pumped over and left on skins. This deep red-hued Cabernet Sauvignon showcases a brick red haze. The aromatic nose flaunts pleasing scents of ripe berries and dry herbs such as aniseed and sage. These fragrances make way for a rich and soft palate filled with concentrated fruit flavours and balanced tannins. This full-bodied Cab Sauv ends in an elegant, yet powerful and long finish. Made for consumption upon release, this mouth watering red wine has the potential to be cellared for six years. It tastes fantastic with mustard and herb crusted rack of lamb, served with sautéed vegetables.

A unique expression of the Margaret River, Deep Woods Hillside Cabernet Merlot exhibits aromas of cassis and dried herbs. The palate is a rich mixture of red and black berries and is medium bodied with elegant silky tannins. Great length with a touch of sweet spice and dark chocolate notes.
