Burly Citrus Gin
Burly Citrus Gin is produced in hand crafted sets of bespoke stills at our artisan distillery in Burleigh Heads. Infusions of green and pink Australian finger limes, the flesh and rind of four other fresh citrus fruits and a combination of premium ingredients come together to achieve the unique flavour profile of our double distilled gin. The aroma of this 'citralicous' variant is predominantly blood orange and lime supported by juniper and spice. The palate exhibits more of the same flavours along with subtle notes of vanilla and liquorice. With a tangy mouthfeel and 'citrus' aftertaste lifted by the slight alcohol heat, it lends itself to enjoying straight, 'on the rocks', or in the cocktail of your preference, ideally with slices of orange, lime, pink grapefruit and finger lime beads. Burly Cucumber Gin
Burly Cucumber Gin is produced in hand crafted sets of bespoke stills at our artisan distillery in Burleigh Heads. Infusions of fresh seedless Lebanese cucumbers and a combination of premium ingredients come together to achieve the unique flavour profile of our double distilled gin. The aroma of a 'cool as a cucumber' variant is a pronounced cucumber and melon, supported by juniper and spice. The palate exhibits the same flavours along with vanilla and sweet peppery notes. With a smooth mouthfeel and aftertaste softening the alcohol, it lends itself to enjoying straight 'on the rocks', or in the cocktail of your preference, ideally with a slice of cucumber and a sprig of mint leaves. Tamborine Mountain Distillery Australian Herbal Liqueur
Attractive green colour. Bold complex aromas and flavours of forest herbs, apple mint jelly, eucalyptus honey, and pepper with a satiny, racy, moderately sweet medium-full body and a warming, subtle, long finish with notes of menthol, minerals, and pepper. An intense roller coaster of herbal forest flavours with a nice cooling and throat clearing effect. It is a type of Liqueur that is flavoured with herbs and spices and traditionally drunk neat as a digestif but it can also be a great addition to cocktails.
The Aisling Distillery Riverina Rum
This rum is from 2016 harvest molasses that has been aged in 3 x 225 litre, uncharred shiraz casks. Consists of Cask Number 81,83 & 87. Bottled in April 2021 at 47.5% Alc it is a numbered release. With an initial limited release of 700 bottles. Colour: Our Rum is crimson red to rich brown and caramel, aged in uncharred Shiraz Casks from a locally sourced Riverina Winery for 4 years, it contains natural colouring and flavouring from the casks with a rich molasses finish. Nose: When you raise your nose into a glass of our Riverina Rum, the moment before the flavours deluge into your mouth, your mind will often race through a life time of memories. This can be in ways of flavour that take you back to childhood Christmases, or drinking with your buddies (we’ve all got them). Whatever it brings to mind, the smell of rum activates parts of our emotional senses in our lives both past and present. Palate: In order to maximise your palate, hold the first sip in your mouth,then you will really appreciate on the next sip, look out for sweet, bitter, acidic, andspicy shiraz tones. After the taste comes the finish & the length. This is the after taste that follows well after you’ve swallowed the Rum. Tasting Notes: the beautiful caramel, banana, chocolate, licorice cherries and raisinflavours perfectly compliment the cleanliness of the double distilled spirit.
