Introducing Cedar Fox Distilling Co, a newcomer to the Australian independent spirits space with the release of its gin. A savoury dry gin with peppery fragrant earthy aromas, it incorporates urban botanicals such as Juniper Berries, Coriander Seed, Lemon Peel, Lebanese Cucumber, Sichuan Peppercorn, Lemon Verbena and Rosemary. The result is a simple yet expressive character.

To create this truly unique whisky, we selectively sourced rare malted rye and the finest malted barley from progressive malt houses, paired them with virgin American oak casks air-dried for 36 months and let it all mature in the maritime air of coastal Sydney. Our preference for malted rye over the far more commonly used unmalted rye affords this whisky a point of distinction evident upon the very first sip. This layered, aromatic spirit offers notes of spiced custard, ginger, stone fruit and baked apple pie with a fresh herbal finish that lingers on the palate.

Bone Dry Gin features juniper that has been distilled three different ways using our copper pot-column hybrid vacuum stills - the only example of their kind in the world. These world-class stills eliminate the damaging impact of heat on delicate botanicals, leaving us free to explore the many attributes of this multifaceted ingredient. To draw out a multitude of diverse flavours from our Macedonian juniper, this hand foraged ingredient was both cold and hot distilled to create three distinct expressions. Joined by a supporting cast of single estate Australian coriander seed, Tahitian lime and lemon scented gum, the resulting spirit offers a supple start on the palate that makes way for a bold balance of citrus and herbaceous intensity that dovetails to a profoundly pine-laden dry finish.Bone Dry Gin rigorously balances a huge amount of raw power with nuance, poise and complexity to reveal an elaborate juniper experience that makes a great G&T and an even better Martini. Starward Wine Cask Single Malt Whisky is uniquely Australian, crafted exclusively with local wine barrels for maturation resulting in a Whisky with balanced aromas of raisins, bananas and a touch of balsamic lead to clove, toffee and nougat. The palate is filled with red berries, hints of cinnamon and a variety of savoury and spice driven notes. A long, dry and tannic finish guides a strong linear reach through the palate, balancing a generous roundness and oiliness of the spirit.

Family owned Distillery located in Spring Bay Tasmania. Botanicals: 11 including 3 local botanicals (Native Bush Pepper, Lemon Myrtle, Tasmanian Wattleseed). Botanicals are steeped for 24 to 48 hours then additional Juniper and Liquorice Root are vapour infused in the neck of our copper pot still to give a traditional Juniper flavour at the front of the palate through to a sweet liquorice finish. This gin is triple distilled giving the spirit an ultra-smooth flavour despite the higher than normal ABV. Nose: Immediate sweet floral notes of juniper, liquorice and spice. Palate: From a bright and sweet juniper opening, the flavours build across the palate to include perfumed floral notes, bright citrus and a crescendo culminating in a big, warm and comforting glow of star anise and liquorice root. Finish: A round smooth mouthfeel from this oily spirit gives way to a fine clean finish of liquorice and spice.

Santisima Trinidad 15 Year Old Rum is the result of three stages of ageing. Firstly, liquors are aged for at least 4 years before being blended into the base rums. Base rums are distilled from cane sugar and ages for 3, 7 or 25 years. This new 15-year-old rum is further barrel aged, rounding out the profile.Dark amber in appearance with aged, Santisima 15 Year Old has woody notes, toasty nuances and dried fruit aromas. The flavour is long, combining sweetness and a slight bitterness well integrated with almond and walnut flavours.
