This multi-award winning Rum is fermented using locally sourced sugarcane syrup and aged for 7yrs in ex-red wine hogshead barrels. Rich and smooth tasting, this Rum will leave toffee apple on the pallet and a long lingering caramel finish.

The aim with this Gin was to only use Tas native botanicals. I discovered some very impressive native berries, leaves and seeds however they could only be wild harvested which meant I could not get enough quantity to make it practical enough for an ongoing production. I have still been able to use some Tasmanian native botanicals however I have now broadened the list to only Australian native botanicals (plus the Juniper). Iam using 6 Native Australian botanicals with 3 of them never used before in any other Gin.All of my botanicals are vapour infused which is a technique not used too often with Australian Gins. Vapour infusion (as opposed to steeped) will give the Gin a much more delicate and subtle bouquet. My Gin is designed to smell beautiful. There will be delicate petal and citrus aromas with a hint of cut hay.

Big, dry and peppery. Big Dry has notes of rosemary thyme, kaffir lime and sage, but what sets this gin apart is the jalapeno we use to give it that extra kick. The intenseand robust flavours complement the dry taste of the juniper berries. This style lends itself to a martini or as a G&T with a slice of jalapeno and coffee beans.

For the rebellious spirit, we have fashioned a modern interpretation of the classic spiced rum.We foraged native Australian botanicals, blended them with exotic Caribbean spices, then hydrated the elixir with pure Tasmanian mountain spring water. The resulting rum contains notes of orange and cinnamon, with hints of vanilla playfully hidden for the adventurous to discover.New Norfolk Distillery is anchored in the Derwent Valley at the southern edge of Australia.
