Taking inspiration from those great Tennessee Whiskeys and Kentucky Bourbons comes Australias first version of a sour mash whiskey. Using a classic grain bill of corn, rye and malted barley, sourced entirely from Western Australia, our full flavoured sour mash is bursting with tones of vanilla, caramel and hazelnuts. This mixed grain whiskey is richly textured with elegant spices and fruit with a smooth creamy finish. Each barrel is hand bottled and numbered in keeping with our small batch tradition.

Unique botanicals such as fresh mangos, fresh raspberries and organic white grapefruit juice form a fruity and unconventional backbone, complimented with sweet piney juniper and warm cassia. refreshing strawberry gum and river mint shine through. Tasting Note: Lighter and more delicate in flavour, not alcoholic strength. With a gentle piney juniper and dry coriander seed base lifted up by fresh Australian mangos, raspberries, and white grapefruit juice to create a lively character. Highlighted by the delicate floral flavours of red rose petals and lavender, and warmed by cassia bark. Australian native botanicals of strawberry gum, lilli pilli and river-mint give a gentle, sweet, berry like element and deliciously refreshing. This multi-award winning Rum is fermented using locally sourced sugarcane syrup and aged for 7yrs in ex-red wine hogshead barrels. Rich and smooth tasting, this Rum will leave toffee apple on the pallet and a long lingering caramel finish.

The aim with this Gin was to only use Tas native botanicals. I discovered some very impressive native berries, leaves and seeds however they could only be wild harvested which meant I could not get enough quantity to make it practical enough for an ongoing production. I have still been able to use some Tasmanian native botanicals however I have now broadened the list to only Australian native botanicals (plus the Juniper). Iam using 6 Native Australian botanicals with 3 of them never used before in any other Gin.All of my botanicals are vapour infused which is a technique not used too often with Australian Gins. Vapour infusion (as opposed to steeped) will give the Gin a much more delicate and subtle bouquet. My Gin is designed to smell beautiful. There will be delicate petal and citrus aromas with a hint of cut hay.

Made using a tradition family recipe and Queensland barley aged for 7 years in ex redwine reconditioned French Oak barriques with American oak heads. This whisky displays rich luxurious amber colour, sweet honey and spice on the nose. Complex sherry, port and vanilla on the palate. Perfect for celebrating births, weddings, wakes and anything in between.
