Made from low yielding vineyards at Moonambel in the Pyreness district of central Victoria, Dalwhinnie is an example of how good Victorian Shiraz can be. Tremendous depth of flavour running the gammet from red currants to dark plums, spice and mineral. The plentiful tannins are absorbed by the fruit and the finish is long and lingering.

This vibrant Shiraz from Cape Barren in McLaren Vale is full of ripe black fruits, spice, liquorice and anise aromas with delicate hints of French oak. St Hugo has been a long established name in Australian wine, namely due to the iconic Cabernet Sauvignon from Coonawarra. Made from premium Barossa Valley fruit that provides dark berry fruits with opulent herb and spice characters. The Craiglee vineyard was established in the 1860's, and replanted in 1976 by the current winemaker, Patrick Carmody. All wines are made from estate grown fruit using natural processes that reflect the flavours specific to the site. This is an iconic Victorian wine that features a trademark of pronounced cracked black pepper.

Every so often there are parcels of wine that generate tremendous excitement amongst the winemakers at Schild Estate. They set this aside to make Prämie, the wine that defines the best of the vintage and the land on which it was grown. Intense primary fresh plum flavours show again on the palate, where they hold their presence all the way through to roll out soft and pillowy at the finish. A firmly present, but fine tannin framework provides just enough focus and lift for the fruit to ensure added complexity, but retaining vibrancy to the mouth flavours of this Shiraz.

Created in 1962, Penfolds Bin 128 is a regional wine that reflects the unique climate and growing conditions of South Australia's Coonawarra district and the relatively elegant style of cool climate Shiraz. From the 1980 vintage, French oak replaced American, highlighting the pepper, spice and floral characteristics that define this style. Since the mid-1980s, a greater attention has been paid to fruit ripeness, resulting in a wine that is fuller in style and structure.

St Hugo Cabernet Shiraz displays a dark ruby red with purple hues. The bouquet of dark forest fruits such as plum, blueberry and cassis lead into a beautifully complex palate of blackcurrent, sweet plum and chalky tannins. There is a underlying savoury oak hint and a finish of lingering dark chocolate.
