A popular bubbly on cafe lists around the country because it's an easy-drinking style with some intriguing straw characters, a hint of yeast, clean flavours, and balanced acidity.

This estate-grown Sauvignon Blanc and fruit from selected Southern Margaret River growers. Zesty citrus, passionfruit and herbal aromas are combined with hint of 'gunflint'. The palate exhibits clean passionfruit and citrus flavours, with a core of cleansing natural acidity that provides freshness and poise with a persistent and flavoursome finish.

Although not typically lemony, this wine exhibits more complex aromas of smoked almonds and honeysuckle as well as buttery textures from the natural malolactic fermentation. The palate displays a spicy mineral flintiness with exotic fruit flavours.

This wine is made from Albariño grapes carefully grown in the vineyards at Val do Salnés (valley of the salterns) in Galicia, where most vineyards and wineries congregate under the Denominación de Origen Rías Baixas. This grape variety is characterised by its small clusters, early ripening and medium vigour. No fancy winery or laboratory tricks – just some very clever canopy management and timing as to when they pick. Their Sauvignon Blanc comes in at 9.5% and it's simply stunning. As Dr Forrest proudly points out, the wines have such structure, tannin, depth and balance that even experienced tasters would struggle to pick out the lower alcohol wine in a blind tasting line up!
