COLOUR Medium Purple. NOSE Plums, nutmeg, black pepper and rose water on the greet. PALATE An engaging palate of cocoa nib and red cherries on the entry, easily descending into darker avours of tar and roasted coffee. The nish is clean and vital, with crunchy red fruit tones left to linger.WINEMAKING Shiraz fruit is picked and gently destemmed as whole berries to fermenters. The fruit is cool fermented at 22°C to retain fruit freshness and allow for gentle extraction of tannin and avour. After 10 days on skin with twice daily pump-overs the wine was gently separated from the skin and transferred to French Oak barriques, to complete fermentation. FOOD PAIRING Duck breast, char grilled pork chops.

Margaret River is renowned for its premium Siraz wines. This example emanates from one of Wilyabrup's a multi star rated Halliday Winereis. The fruit was harvested in Mid-April when the skin tannins are ripe and the flavours are bold. The whole berries add some spice and complexity to the wine. Aromas of glazed plums, cloves and cracked peppercorns give way to a rich palate with hints of citrus blossom, oyster shell and vanilla pod compliment a long and complex finish, further exhibiting a bright fruit core and pure longevity of pristine tannin. The fruit is de-stemmed with no crushing of the berries so that we begin whole berry fermentation. The whole berries seem to add some spice and complexity to the wine. Our Shiraz seems to enjoy relatively cool ferments, plenty of aeration and gentle treatment. The wine is gently pressed of skins, near dryness, based on taste.The bubbly purple wine finishes its fermentation in the presence of mainly French oak, with the smallest portion of American oak. The wine is racked when it has finished its malolactic fermentation, and then once or twice more over the season based on its individual requirements. The grapes for this spectacular Best Blocks Shiraz were sourced from the Miamup Road vineyard. The fruit was harvested, crushed, and transferred to stainless steel vessels for fermentation. Post maturation in a combination of American and French barriques for 18 months, the resulting wine features a deep purple red colour. A swirl of the glass presents scintillating aromas of freshly cracked pepper, mixed berries, cocoa bean, spice and vanilla. Fine grained tannins integrate with the soft palate containing ripe red fruits and spices. The finish is elegant and lengthy. This delightful Shiraz can be enjoyed now, or within a cellaring term of eight years. It tastes excellent with char grilled porterhouse steak alongside mustard butter sauce and seasonal vegetables.

Exhibits pure aromas of wild strawberry and white florals. The palate displays ripe fruit and finishes bone dry.
