The grapes used to craft Warramate Chardonnay were whole bunch pressed, and fermented in French oak barrels and stainless steel. This led to the creation of a pale straw coloured wine with light green hues highlighting its edges. The attractive bouquet is dominated by intense aromas of orange blossom, lemon citrus peel and sea spray minerality. This enticing Chardonnay flaunts a crisp palate containing tangy grapefruit, white peach and citrus flavours, coupled with light saline notes. A firm acid line balances these vibrant characters to culminate in a focused and lengthy finish. Crafted to be relished upon release, this wonderful white wine can also be cellared for 5 years. It tastes great with vegetable terrines, steamed fish and risotto.

David Bicknell is a Chardonnay perfectionist with a passion for terroir and contrasts in the characters of different vineyard sites. In the glass: Bright fine straw with a green hue. On the nose: Fabulous purity and lift with ripe, complex stonefruit combining with lees and struck match magic. On the palate: A complex funky monster! It shows tremendous depth and umami being satiny soft throughout with amazing refined power and balance and extraordinary length and persistence. Classy!

This white blend's aroma includes some beeswax complexity and preserved lemon peel lift. Red apple skin and creamy white peach. The palate has crunchy red apple freshness and delicious passionfruit tropical fruits. The small amount of skin contact gives a textural wine and encouraged structure through tannins. The length is dominated by the Semillon and driven by a bright acid tang that would stand up to a variety of food pairings.

Lovely light bead, gently bottle carbonated by the French method which means hand riddling and disgorging to remove the yeast from the bottle. Not too acidic and lovely fruit on the palate.

Winemaking This is a blend of 90% Chardonnay and 10% Pinot Noir fruit sourced entirely from the Napoleone Vineyard in the Yarra Valley. Each bottling represents a blend, being one part from the grandfather base tank (the oldest element being 2010) along with one part from the current vintage. The wine sees full MLF, as well as small injections of new oak and brandy spirit. Appearance Pale gold in appearance with a fine persistent bead. Bouquet Aromas of citrus fruits and subtle apricot, complemented by a doughy, bready complexity. Palate Fresh and vibrant with a focused palate structure of apple blossom and citrus characters with complex brioche notes.
