The journey of 818 Tequila begins with the skilled jimadores, local agave farmers from the Tequila region. These experts identify the optimal conditions for growing agaves in the Los Valles region, patiently waiting for at least 7 years until the agaves reach peak maturity. Once harvested, the agaves undergo a slow cooking process that lasts for over 30 hours. Large stone Tahonas, weighing 800 kilograms each, are then utilized to crush the cooked agaves. This age-old technique allows for the extraction and collection of the juice, preserving the authenticity and tradition of tequila production. The extracted juice, known as "mosto," then goes through a natural fermentation process. Unique wood and stainless steel tanks are utilized, and the fermentation is enriched by using leftover agave fibers from the tahonas. Native yeast is added to enhance the aromatic expression, resulting in a deeper and more nuanced flavor profile. The tequila is distilled in hand-built copper alembic pot stills of the highest quality. It undergoes a double distillation process, carefully monitoring the alcohol volume to achieve the desired smoothness that 818 Tequila is known for. To further enhance the character of the tequila, it is aged in superior oak barrels. The Reposado and Añejo expressions are aged in both American and French oak, allowing for a harmonious fusion of flavors. Doña Celia Añejo Tequila

Doña Celia is a premium tequila brand named after La Catrina, a respected and influential woman in the Mexican town of Atotonilco, Jalisco, where the tequila is produced using traditional techniques and the finest ingredients. This artwork "La Calavera Catrina" was a zinc etching originally created around 1910-1913 by Mexican printmaker José Guadalupe Posada who was known for his images of political and social satire. The engraving mocked those who pretended to be of a higher class even if it meant starving or going without flesh. La Catrina soon became a symbolic figure during the time of the Mexican Revolution being associated with Dia de Los Muertos (Day of the Dead), a pre-Colombian Meso-American festival of the observance of death and life that is celebrated on November 2nd in all of Mexico, the Yucatan Peninsula and parts of Central America. To this day, Catrina continues to be a significant figure and she is one of the symbols regarding the Day of the Dead however she is also found to be in many books, cartoons, posters, figurines and artwork spanning over 100 years and is globally recognisable. Produced at the Casa Maestri distillery, it’s aged in white oak barrels for a minimum of 12 months resulting in a rich and complex flavour that is sweet and woody. It gives notes of roasted bell pepper, fudge, and brandied cherries with a smooth finish. They utilise traditional slow baking in brick ovens and autoclaves to cook the blue agave hearts, and traditional mills (molinos) to extract the juices from the Agave. Don Fulano Blanco

A highland tequila, Don Fulano is made from 100% estate grown mature blue agave cooked in autoclave ovens, naturally fermented in open tanks using wild and cultivated yeast, and distilled in approximately 80% copper pot still and 20% copper, double column still. The spirit is distilled to 50% to 55% then cut with demineralised water from a deep well in the distillery. The tequila is non-charcoal filtered and contains no additives. The Blanco is a bright and colourful expression of highland agave. Fresh and bright on the nose yet profound with beautiful elegance. There is harmony between a wide spectrum of aromas that only mature agave offers; a myriad of delicate floral and fruity notes is balanced by a light herbaceousness. Reminiscent of damp red soil it opens the senses and awakens the appetite. Flavours of grilled pineapple with hints of white pepper almost makes you want to chew it, with underlying notes of butterscotch and an almost oily viscosity on the finish.
