Four Pillars Gin worked with the QANTAS Rockpool mixology team to create the second release in their Bartender Series - an Asian-inspired Modern Australian gin with softness and spice, one that is truly a spirit of Australia. Red and green Szechuan give it a lovely warm mouthfeel, while the macadamia nuts give it softness and an almost creamy palate. The fresh Rose Glow apples, fresh tangelos, fresh grapefruit peel and dry native quandong add fruit and lift. Rockpools bartenders were aiming for a gin with nice spicy complexity and mixability something to create a great G&T, or classic dry martini. St. Agnes 5 Year Old Brandy is a richly coloured, full-bodied brandy. It is discernibly fuller-bodied than the Three Star. The Brandy is distilled according to the time honoured Pot Still process from specially prepared wine and then matured for long years in small oak barrels to ensure its pure clean perfection. Ink Gin gets its unique colour from the deep natural infusion of petals from an exotic blue flower. Its even more remarkable, when mixed with tonic and it turns from its lustrous blue to a remarkable blush pink. A premium dry gin made with 13 organic botanicals, including a mix of traditional and Australian natives. Like all true gins, juniper berries are the largest botanical component, however the defining character of Ink Gin comes from the second tier botanicals led by locally grown lemon myrtle leaf, coriander seed, Tasmanian pepper berry and freshly peeled sundried sweet orange peel. These major ingredients give Ink Gin its fresh piney, spicy and citrusy aroma and flavour. The third group of minor botanicals include elderflower, cinnamon, cardamom, angelica root, oris root, licorice root and lemon peel. Like a pinch of salt, these minor ingredients are critical to the end result adding perfume, body and balance.

Aqua Vitae Modern Gin is as natural as it can get, and brings a flavour like no other.Translated from old Latin, aqua vitae means water of life, a term used for distilled spirits that originated in the Middle Ages. Reinvigorating the name called for reinvigorating the spirit.With a focus on local Tasmanian and Australian ingredients, some of which we harvest ourselves, Aqua Vitae challenges the heavy gins that dominate the Australian market, providing a modern, clean spirit that teases the palate with fresh, fruity, and floral notes. The imperial mandarin, eucalyptus, and lemon myrtle notes pair well with a light tonic and a slice of fresh peach or mandarin.

Created to capture as purely as possible the essence of the Australian summer garden, this is the original Garden Grown Gin (formerly called Distillery Botanica Gin). The French perfumers' time-honoured technique of enfleurage is used to extract the delicate scent and flavour from the hero botanical Murraya. It along with Chamomile, Sage, Rose, Angelica, Orris Root and of course Juniper bring this floral gin alive. On the nose, there are hints of jasmine, sweet honeysuckle and orange blossom.
