Four Pillars Gin worked with the QANTAS Rockpool mixology team to create the second release in their Bartender Series - an Asian-inspired Modern Australian gin with softness and spice, one that is truly a spirit of Australia. Red and green Szechuan give it a lovely warm mouthfeel, while the macadamia nuts give it softness and an almost creamy palate. The fresh Rose Glow apples, fresh tangelos, fresh grapefruit peel and dry native quandong add fruit and lift. The original. Our Sydney Dry Gin is unlike any other. We steep 10 botanicals in Australian wheat spirit, which is then distilled in our little German copper still. You'll notice a classic juniper backbone complimented by fresh green apple, native strawberry gum leaf, and chamomile. It is an easy drinking gin - delicate, fresh, and floral. Using the distillery's 120 years of rum-making expertise, the master craftsmen have searched our two-year old Bundaberg Rum reserves and selected a vat that was producing a rum with extra special characteristics. This premium rum was then doubled aged for a minimum of four years in our hand-crafted oak vats until it reached its peak.

Four times distilled, made from whey, pure Australian water and charcoal filtering helps to remove any impurities to produce an ultra clean, silky smooth spirit with the finest taste.
