Kavalan Solist Madeira Single Malt Taiwanese Whisky (Australian Exclusive Release)
In ancient times, the land around I-Lan in Taiwan was called Kavalan, a mysterious land that was solely inhabited by the indigenous people of the Kavalan clan. The name was officially recognized by the Emperor of the Chin dynasty in the year of 1809 when the original city was also built under the same name. Kavalan had always been kept primitive and protected from the outside world by the Syue-shan mountain range which is abundant in high quality natural water that comes from deep within the mountain range. The mists of Kavalan and the spirits of the past have been created for you in this exquisite whisky. The process water is drawn from the springs in the Snow Mountain and Central Mountains imparting a smooth and creamy mouth feel to the whisky. Madeira is a rich fortified wine made on the Portuguese Madeira Islands, where the wine is aged and oxidized through heat. Kavalan’s tropical new make extracts the many rich fruit notes from the wine cask to create an irresistibly sweet yet delicate whisky. This cask of Solist Madeira, cask number D150514027A, was chosen and bottled exclusively for Australia, with only 211 bottles released.

Hakushu 12 Year Old Single Malt Whisky
This wonderful peated Japanese single malt whisky hails from Hakushu distillery, owned by Suntory. The distillery resides in the forests of Mt. Kaikomagatake, with the original Hakushu distillery built in 1973. Rather fittingly, it boasts a fresh and foresty flavour profile. On the nose you’ll find toasted barley, chopped almonds and a little bit of barrel char. Hints of milk chocolate and dried grass bring sweetness. Much more fruit on the palate, but it's by no means a sweet whisky. Still rich, herbaceous and grassy, with a waft of smoke along the way. Nice expression here.
Mars Distillery Komagatake Limited Edition Single Malt Japanese Whisky
Mars Distillery Komagatake 2019 Limited Edition Single Malt Japanese Whisky has been matured first in ex-Bourbon oak barrels, followed by new Sherry Oak & American oak. The barrels were hand picked from the highest barrels in the distilleries warehouse. This generally means a warmer maturation, resulting in a faster maturation. Allowing the flavours from the barrels to provide plenty of flavour in a short time (3 to 6 years). The nose on this whisky is very clean with aromas of vanilla, citrus, pears, and green apples. First on the palate comes the oak then blended with spices. Followed by a dominated vanilla, melson balls, and lemon meringue pie. The finish is citrus, oak, spice, and orchard fruits.

The Hakushu Distillery is know as the 'Mountain Forest Distillery' as it stands amidst fresh streams and lush forests. Built with the notion, 'Coexisting with nature', a bird sanctuary was set up to help preserve the natural environment, thus preserving the pristine water that goes into creating the whisky. The 12 year old single malt whisky has a crisp and vibrant taste and can be enjoyed on neat, on the rocks or with ice and soda water.
Togouchi 15 Year Old Blended Japanese Whisky
Not strictly a Japanese whisky, Togouchi source grain whiskies from Scotland & Canada and aged them in Japan. This is a blend from Chugoku Jozo, who mature their whiskies in a tunnel rather than a warehouse. The temperature of the tunnel is always 15 degrees while the temperature of the cellar at the headquarters in Hatsukaichi city is a little higher than that. Nutty, spicy whisky with a lovely butterscotch mouth feel. On the palate it expresses vanilla sweetness and a fine peat iodine, with hazelnuts and chocolate on the finish. Almost feels like a whisky/bourbon hybrid.
Nikka Tailored Premium Japanese Whisky
Nikka Tailored Premium Japanese Whisky was release in 2019 as the long-awaited replacement for the Nikka 12 Year Old. This whisky has been exceptionally produced. The nose is lively and fruity with malty aromas of vanilla, caramel, cookies, and biscuits. The palate is sweet but with a firm malt base carried by a gentle sweetness from the Coffey grain. The finish lingers with a spicy bitterness. In 1918, a young Japanese man with an ambition to make genuine whisky went alone to Scotland to unveil the secret of whisky making. He is Masataka Taketsuru, the founder of Nikka Whisky. Given the chance to go to Scotland, Masataka became the first Japanese ever to master how to make whisky.
Ichiro's Malt Wine Wood Reserve Pure Malt Japanese Whisky
Ichiros Malt Wine Wood Reserve Pure Malt Japanese Whisky from the Ichiro's Malt series, containing whisky from the now closed Hanyu distillery. This whisky was matured, vatted and bottled at the Chichibu distillery. The whisky was finished in French wine casks. The nose has hints of black liquorice, creamy malt, and chocolate orange. The palate boasts oily walnuts, red berry sweetness, and white pepper. The finish lingers with Sherries spices and a little hint of chocolate.
