The palate shows hints of strawberries and cream, perfectly balanced with fruit sweetness and a crisp, refreshing finish. Winemaker’S Note: The grapes were picked from a single vineyard, 40% Merlot, 30% Cabernet, 30% Chardonnay, then crushed and left on skins for 8 hours to enhance the flavour and release the vibrant colour, before being pressed. Vintage Note: 2021 was an overall standout vintage. Near perfect ripening condition and cool, mild weather kept the natural acidity of the whites fresh. Harvest decisions were precicely made and optimal balance of ripeness and acidity was achieved.

Winemaking - Machine harvested to the press to remove the juice from the skins and limit the potential for too much colour pick-up. The juice was cold settled for clarity with only minor levels of juice fining. Fermentation went through to dryness.
