Serafino Shiraz

Angove Family Crest Shiraz
The premium fruit parcels for this Shiraz wine were sent to the winerys Vintage House and crushed into 7-decade old concrete vats. Fermentation was carried out by wild yeasts found on the skins of the fruit. This was followed by careful extraction. Post fermentation maceration was done next and the drink transferred to American and French oak hogsheads for malolactic fermentation. 14 to 16 months later, the resultant wine was racked and filtered.
Paxton MV Shiraz
A delicious mouthful of McLaren Vale Shiraz. Paxton has generous ripe black fruits, sweet spice, liquorice and rich chocolate flavours on the palate. Framed by savoury oak and silky fine tannins with a lengthy finish.
Coriole Shiraz
Vibrant in colour the nose shows plum and berry fruit with spice pepper and well integrated oak. The palate has good fruit weight with attractive berry flavours and a fine tannin finish.

The Pollinator Series salutes our beloved Honeybee, Paxton's mascot, for it's vital role in maintaining natural balance and health in the world and in our organic-biodynamic vineyards. The Pollinator Shiraz shows an explosion of raspberries, strawberries, mulberries and plums with a hint of lavender and sandalwood on the nose. On the palate, a medium bodied, drink while young style of wine, bright and fresh red berry fruits followed by a fantastic mid palate packed full of vibrant layers of fruit intensity and topped off with silky tannins and a velvet finish.

Rich and opulent displaying aromas of deep plum and black cherry with hints of complex herb and delicate oak spice. The palate is full flavoured yet elegant with dark fruits and bright red berries, framed by firm, structural tannins and moreish acidity.
Mitolo Savitar Shiraz
The fruit used to produce Mitolo Savitar Shiraz was sourced from bountiful vineyards in southern McLaren Vale. The grapes underwent fermentation on their skins for a fortnight, which was followed by pressing. The resulting dry red wine displays a deep garnet red colour. The perfumed bouquet exudes attractive aromas of blackberry bramble, tar and fresh mint, coupled with floral hints and powerful vanillin oak characters. These fragrances effortlessly make way for a lush and intense palate, brimming with blackcurrant, plum and liquorice flavours. Integrated with silky and juicy tannins, the drink culminates in a fine and grainy finish. Cellar this wine for 8 to 12 years, for the flavours to evolve. Serve it on a special occasion with lasagna or Vincisgrassi.

Mitolo Jester Shiraz
Intense, textured and showing pure fruit flavours, Jester Shiraz is considered Mitolo's baby G.A.M Shiraz using the same barrels in which the G.A.M was previously aged in. The palate is full of bright, red berry flavours, a subtle herbal character and an overall savoury quality to the finish. Made to be upfront and approachable for early appreciation, the Jester Shiraz delivers excellent quality for the price.
Shingleback Red Knot Shiraz
Shingleback's Red Knot Shiraz is a superb example of how a McLaren Vale Shiraz should be. Rich, luscious aromas followed by a medium-bodied palate with well balanced acidity, tannins and texture.
