Our interpretation of a traditional British Navy Strength gin, KI NO BI SEI is made using the same production method with 11 botanicals distilled in 6 distinct flavour categories: the final blend has been recalibrated to bring out the botanicals at maximum intensity. High proof allows the distinct taste of KI NO BIs flavour profile to prevail. Its punchy at first on the palate, still has the cleanness and harmony. All essences of flavours are enhanced in good balance.

Deep red color. The nose is complex with red fruits and figs, followed by aromas of blackcurrant. On the palate, the wine is round with soft tannins, displaying generous aromas of blueberry and blackberry. Well balanced, with a good persistence on the finish.

Newcastles first, barrel aged rum. Made from fermented treacle, this rich but smooth rum has delicate aromas and a pleasant taste. Even at cask strength of 62% ABV it is smooth and enjoyable. Aged for a period of 3 years in an American Oak ex bourbon/port barrel. Its namesake comes from the boat that our owner got to name as a kid, which belonged to his idol and mentor, his Grandfather.

Okayama Craft Gin Sakura Cask Finish is distilled using rice shochu as a base plus a blend of more than a dozen classic botanical including coriander, lemon peel, juniper, lavender, and orange. Unique to this gin is the Okayama region famous Momo white peach. Finished in a barrel made from Sakura (Japanese Cherry Blossom) imparting a sweet wild berry note. The resulting gin has aromas of citrus, lavender, peach, and wild cherry across the nose. The palate comes together with a blend of juniper, Mikan/Hetsuka orange and yuzu lemon, kumquat, Saigon cinnamon. he cask influence adds brioche, cherry candy and marzipan.

Great Southern Distillery Limeburners Port Cask Single Malt Australian Whisky is first matured in American oak ex-bourbon barrels and then in an Australia Port cask. This single malt has fruit and spice aromas straight from the bottle. Add a splash of water and this whisky changes to aromas of port and vanilla with hints of raisins, warm spices, and honey. Kyoya Hinata Small Batch Gin is distilled with generous amounts of juniper complimenting the piny flavour and provides this gin its signature warmth. Botanical extracts from hebess citrus, kumquat, yuganatsu citrus from the sunny Miyazaki prefecture have been added. A beautiful afterglow of cardamom and chamomile shine through.
