Created our farm in the small village of Allworth NSW, this boutique batch of hand-crafted gin is our homage to the tradition of gin making and the native flavours of Australia. Thirteen botanicals including native sage, myrtles, pepperberry and our signature native sugar bag honey bestow their magic upon this gin. The rare sugar bag honey is produced in small quantities by Australian native stingless bees. This inscribes a unique citrus sweetness that when distilled using a traditional copper pot still delivers a softness and depth to the gin. The result is a beautifully rich gin, at home in a traditional cocktail yet with the complexity and softness to be sipped neat over ice.

Our signature gin is craftfully made using 16 different ingredients which combined in our secret balance of flavours produces a delightfully tasting botanical gin. The Botanicals used include; Juniper, Coriander Seeds, Star Anise, Almonds, Cloves, Cardamom, Dill Tips, Ginger, Grains of Paradise, Black Pepper, Orris Root, Cinnamon, Angelica Root, Fresh Lime, Fresh Lemon and Fresh Orange.

Sublime is our award winning recipe relaunched into our permanent collection after being awarded gold and Champion Small Batch Spirit at the 2019 Australian Distilled Spirit Awards. Sublime Gin tantalises with strong aromas of lemon myrtle and cardamom, a light grains of paradise body and the sweet smoothness of dandelion root.Perfect on its own, or poured over an ice cube. Breakwater is the signature gin, inspired by classic London Dry Gin and our love of the coast. Enhanced traditional bright pine and herbal notes of juniper with crisp flavours of whole grapefruit while angelica and dandelion roots impart a lingering salty savouriness. The unique blend evokes the tang of sea spray at the breakwater, or catching the first ocean wave of summer - intense, exhilarating and calling you right back in again. Breakwater offers a bold flavour profile that’s smooth enough to enjoy neat. Also perfect in a dry martini or negroni.

A gin that is ever changing and makes an exciting addition to any gin collection. The seasons are ever changing it could be Rhubarb, Cherry, Sloe Berry or Elder-flower. Depending on the season and the fresh produce we can grow on the farm or source locally. For our first seasonal release we have discovered Cumquats are magnificent in gin so we have infused them in our GiN with a limited number of bottles produced each time.

Infused with ten botanicals including elderflower,grapefruit, wild apple and of course strawberry. Best served with sparkling water, Soda or Tonic.Garnish with mint, basil, dehydrated lime, dehydrated strawberries, fresh strawberries, juniper berries or edible flowers (begonias) for decoration
